HEAVENLY pita bread with aunt Ritsa's eggplant salad

For the eggplant salad:
2-3 eggplants
1-2 garlic cloves
1 large onion
1/2 cup parsley
2 tbsp olive oil
1 tbsp vinegar
Salt and pepper

For the pita:
250ml water
2tsp dry yeast
1/2 tsp sugar
1 tsp salt
2,5-3 cups flour
Olive oil for frying
Thyme or oregano for seasoning
