Hiyajiru Somen (Somen Noodle in Chilled Sesame Soup)

Its the last day of August but anyone still feeling the heat? So hot right? I have the perfect dish for - you. Hiyajiru means chilled soup and commonly served over rice with variety of toppings, but today we have hiyajiru somen, because I love noodles Sooo goood!!! If I say so myself. Its healthy, refreshing, and full of, you guessed it, UMAMINESS!! Feel free to adjust the amount of miso, soy, sugar, dashi depending on how sweet or savory you like your soup! Hope you have a chance to make it, youll love it! Also yummy with udon or rice noodles!

Recipe ( serves 2)

200g somen

Soup sauce:

1-2 tablespoons toasted sesame seeds
3 tablespoons sesame seed paste or tahini
2 tablespoons miso
1 tablespoon soy sauce or tamari
1-2 tablespoons coconut sugar
1 1/2 cups dashi

Topping:

1 tablespoon finely grated ginger
1 green onion, finely chopped
4-5 shiso leaves, thinly shredded

1. Grind sesame seeds. Add sesame seed paste, miso, soy sauce, sugar, and dashi. Chill for at least 30 minutes.
2. Thinly shred shiso leaves, chop green inion, grate ginger.
3. Boil somen according to package instructions. Drain, rinse, shock in ice bath, and drain.
4. Plate, add soup sauce, add toppings, and enjoy!!

I know I say this every time, but this is one of my favorites!! Its really yummy. I hope you have a chance to try it while its still hot out!
