Blueberry Popsicle Recipe
Ingredients:
1 can coconut milk, full fat, organic
1 cups of organic blueberries, or other fruit
Zest from 1 organic lemon
2 tsp. Maple syrup for coconut milk
1 tsp. Or more Maple syrup for fruit
tsp. Ground cinnamon
1 tsp. Vanilla extract

Directions:
Place coconut milk in a container with a spout for easy pouring. Add 2 tsp. Of maple syrup, cinnamon, vanilla, and the lemon zest and mix with a whisk to combine.

In a food processor add the blueberries and 1 tsp. Of maple syrup if needed for sweetness.
Pulse until liquid but still a little chunky.

Fill each popsicle mold about half full with the coconut milk and then spoon in the fruit mixture until almost full. Add the popsicle sticks and place the popsicles in the freezer overnight.

To serve, take out as many popsicles as needed and place each one under cold/warm water. Squeeze the mold and try to remove the stick. If it seems stuck just keep repeating the water and squeeze routine until it comes loose. Feel free to use any fruits you like: peaches, strawberries, nectarines, pineapple ect. Enjoy!
