Homemade Caramel Sauce - A Thick Creamy Topping by Rockin Robin

You can use this caramel topping for just about anything! Ice cream is a perfect match, so is cheese cake! Really, anything delicious can be topped with it right?

You can also use this as a dipping sauce for apples, bananas, strawberries etc. The sky's the limit on this one.

The best thing I like about this recipe other than being totally delicious, is that the ingredients are pure. No chemicals and all that other stuff you find in the jars at the grocery store. Who wants to feed their family and kids that?

Especially when you can make it so easy. It literally takes minutes to make and it keeps in the refrigerator for up to a couple of weeks.

Ingredients:
1 cup of white sugar
1/4 cup water
2 Tbsp. organic salted butter
3/4 cup organic heavy whipping cream
1 tsp. vanilla extract (the real stuff only please) :)

Directions:

Place the sugar and water in a heavy bottom 2 qt. sauce pan over medium high heat.

Do not stir at any time. You just want to swirl the pan. Don't ask me why, it just works.

Once the sugar dissolves turn the heat to medium low and swirl the pan when the color turns amber. Keep you eye on the pan. Don't you dare turn your back for even a second. It could burn.

Keep swirling the pan as the color gets darker. When you see a nice golden brown color, add the butter and stir until combined. I like using a whisk for this part.

Then turn off the heat and add just a tiny bit of cream to the pan, say 2 or 3 Tablespoons worth and whisk again. Add another 3 Tablespoons of cream and repeat.

After the third addition it may be cool enough to add the rest. Please be careful. The steam is incredibly hot and could cause bad burns.

Once the cream is incorporated, add the vanilla and stir.

That's it. You are done.

You can let the caramel cool completely on the stove or do as I did in the video and place it in an ice bath to speed things up.

It's delicious warm. Store the caramel in a mason glass jar and store in the refrigerator for up to 2 weeks.
