Homemade Chaat Masala
Recipe in English:

Ingredients:
-Podina (Mint leaves) ½ Cup
-Zeera (Cumin seeds) 2 tbs
-Ajwain (Carom seeds) ½ tsp
-Kala zeera (Caraway seeds) 1 tsp
-Sabut dhania (Coriander seeds) 1 tbs
-Anardana (Dried pomegranate seeds) 1 tbs
-Sonth (Dried ginger) 1 small piece
-Sabut kali mirch (Black peppercorns) 1 tsp
-Jaifil (Nutmeg) 3 small pieces
-Tatri (Citric acid) 1 tsp
-Amchoor powder (Dried mango powder) ½ tbs
-Kala namak (Black salt) 2 tsp
-Namak (Salt) 2 tsp
-Lal mirch powder (Red chili powder) 2 & ½ tbs

Directions:
-In frying pan,add mint leaves,roast until crispy and take out in a bowl and crush with your hands.
-In frying pan,add cumin seeds,carom seeds,caraway seeds,coriander seeds,roast until aromatic and changes color & take out in a bowl.
-In frying pan,add dried pomegranate seeds,dried ginger,black peppercorns,nutmeg,dry roast for 2 minutes & take out in a bowl.
-In spice mixer,add roasted spices and blend to make a fine powder.
-Add citric acid,dried mango powder,black salt,salt,red chili powder and blend again.
-Chaat masala is ready!
-Can be stored in air tight container for up to 2 months.

Ajza:

-Tatri (Citric acid) 1 tsp
-Amchoor powder (Dried mango powder) ½ tbs
-Kala namak (Black salt) 2 tsp
-Namak (Salt) 2 tsp
-Lal mirch powder (Red chili powder) 2 & ½ tbs

Directions:
-Frying pen mein podina dal dein aur crispy aur brown hunay tak roast ker lein aur bowl mein nikal ker haath ki madad sa crush ker lein.
-Zeera,ajwain,kala zeera aur sabut dhania dal dein aur khushbu & color change hunay tak roast ker lein & bowl mein nikal lein.
-Frying pan mein anardana,sonth,sabut kali mirch aur jaifil dal dein aur 2 minutes kliya dry roast ker lein & bowl mein nikal lein.
-Spice mixer mein roasted spices dal dein aur blend ker ka fine powder tayyar ker lein.
-Tatri,amchoor powder,kala namak,namak aur lal mirch powder dal ker dubara blend ker lein.
-Chaat masala tayyar hai.
-2 months tak air tight container mein store ker saktay han.
