Homemade Sausage Turkey Dressing With Herbs For Thanksgiving! Easy Recipe by Rockin Robin

Thanksgiving is family time with good food and celebration for all we are thankful for. So I want to share our family's recipe inspired by my father in law.

He makes this recipe for us every year and it is amazingly good. It is a little heavy on the sausage and I think it is why it's so delicious. The fresh herbs really bring this dish to life and there is not a ton of fat in it.

You can stuff your turkey with this dressing and bake some extra in a side dish. Just make sure to cool the stuffing before doing so.

If you are just baking it in a dish be sure and cover with foil. This will keep the dressing moist and wonderful. You can always take the foil off and cook an additional 10 minutes if you want the top to crisp up. We never do that but it's up to you.

You will also notice that everything is finely minced in this recipe. If you've watched my other videos, you know I'm a big fan of that. I love the flavor of onions and celery but I don't like big chunks of it in my dressing.

I also caramelize my onions a bit too. Why? More flavor my friend. You will notice that we also put the sausage in a food processor. My father in law always does that and I think it's for the same reason. I love it this way. If you haven't tried it please do and see what you think.

Ingredients for our homemade dressing:

1 1/2 lbs of pork sausage
11 oz. bread crumbs
2 cloves garlic, minced
1 1/2 large yellow onion, finely minced
1/3 cup fresh parsley, chopped
the inner portion of 1 celery stalk with all the leaves and some ribs
2 eggs
1 tsp. poultry seasoning
7 leaves of fresh basil, chopped
2 tsp. fresh thyme, chopped
salt and pepper
2 Tbsp. butter
2 Tbsp. olive oil or more as needed

Directions:
Saute the onion in the oil and butter for 30 to 35 minutes over low to medium low heat. Then add the celery and saute an additional 8 minutes or until softened.

Add the garlic, parsley, basil, and thyme and cook 3 minutes longer. Turn off the heat and let cool.

In another fry pan cook the sausage over medium high heat and add the poultry seasoning and salt and pepper. Drain off any excess oil when the sausage is no longer pink. Set this aside to cool for 15 minutes.

Place the cooled sausage in a food processor and pulse until the pork is ground up.

In a large mixing bowl, add the meat and onion mixture and stir until combined. Pour in the bread crumbs and eggs and mix to combine. I like to use my hands at this point.

Now add the chicken broth a cup at a time and mix until the desired consistency. Remember the stuffing is going to dry out some as it bakes. I like my dressing a little on the moist side for this reason.

I used somewhere between 2 and 3 cups just to give you an idea.

Cover with foil or stuff your turkey with the dressing. I put some pam spray in my baking dish. You can use butter if you wish.

Bake at 350 degrees F. for 35 to 40 minutes. If you want remove the foil and bake an additional 10 minutes to brown the top.
