This is a French term to describe a flavor base of onion, celery, and carrots. We are also adding layers of flavor by adding fresh garlic, fresh basil, and dried thyme. We will balance the acid by using just a touch of coconut sugar and add some creaminess by adding some coconut milk. You are going to love this tomato basil soup made from scratch. Tomato Basil Soup RecipeIngredients:1 medium yellow or sweet onion, chopped fine.2 - 3 stalks celery chopped fine2 - 3 small carrots, chopped small6 cloves garlic, minced tsp. Dried thyme1 bunch of fresh organic basil leaves (12 - 13), rolled and chopped fine1 bay leaf2 cups or more of chicken broth1 can 28 oz. San Marzano peeled tomatoes1 can 15 oz. fire roasted tomatoes, I used organic Glen Muir1 - 2 Tbsp. coconut sugar1 cup full fat coconut milkSalt 2 Tbsp. Olive oilDirections:Place of the canned tomatoes in a blender and blend until smooth. Pour into a stockpot. Repeat with the second half of the tomatoes. Add the bay leaf to the pot.Add the olive oil to a large frying pan over medium heat. Add the onion, celery, carrot, and a pinch of salt. Stir and cook for about 10 minutes or until the carrots are fork tender.Let this cool for 5 minutes and then place it in a blender along with the chicken broth. Blend until it is as creamy smooth as you like it.Add the onion mixture to the tomato sauce in the pot and heat over low heat so it can simmer for at least 10 - 15 minutes.Next add the coconut milk and then the sugar, stirring to combine. Bring to a simmer and taste the soup to see if you need to adjust any of the seasonings. Garnish with a couple of leaves of basil and or some grated parmesan cheese.
