Ground turkey2 small slices of bread, your choice, torn into small pieces cup milk or milk alternative1 medium yellow onion, finely diced (about 1 cups)1 stalk of celery, finely chopped2 cloves garlic, minced1 egg1 tsp. Fresh rosemary, choppedSmall handful fresh parsley, chopped1 tsp. Salt cups ketchup1 tbsp. Brown sugar, packed1 tbsp. Dijon mustard tsp. Garlic powderOlive oilDirections:Preheat oven to 375 degrees F.Pour the milk into a large bowl and add the bread pieces. Mash with a fork to help the milk absorb into the bread.In a large frying pan over medium heat add a Tbsp. of olive oil, the onion and the celery to the pan. Saute the onion/celery mixture for a good 10 minutes stirring frequently. Then add the garlic and cook an additional 2 minutes. Set aside to cool.Once the onions are cool, add them to the bread/milk mixture in the large bowl. Also add the egg, parsley, rosemary, and salt and mix that up with a fork until well combined.You want to add the turkey after youve combined those ingredients so as to not overwork the turkey or beef that you might be using.Then just use your hands to fold in the turkey. Mix it just enough to combine all the ingredients. Pour out the turkey meatloaf onto a foil covered baking sheet. Form the meat into a loaf about 2 - 2 inches tall. Place the meatloaf into the oven for 25 minutes.In the meantime, lets make the sauce. Combine the ketchup, brown sugar, dijon mustard, and the garlic powder in a bowl and stir to combine. Set aside.When the meatloaf is done, take it out of the oven and spoon the sauce over the top. Place back in the oven for an additional 25 - 30 minutes or until an instant read thermometer reaches 165 degrees F.Let this rest 5 minutes before slicing and serve with mashed potatoes, and a salad. You can also make extra sauce and spoon that over the top if you like.
