Milkfish is the pride of Tainan as the precious species is of high nutritious value. Besides that, a rare premium delicacy that tastes as good as Foie Gras, if not better, is the milkfish liver. Also available in limited quantity is the fish intestines savoured by the locals. These delicacies are served at the eatery, Ah Tang Porridge, that has been around for decades and now helmed by the 3rd generation. As early as 3am, the owner gets the freshest fish from the port and starts day of preparation. Milkfish and Spanish mackerel, in soup and porridge, are offered. Each bowl of porridge is generously packed to the brim with fish meat and oysters. Needless to say, the broth is light with lingering natural sweetness.
