A simple and healthy vegetable dish that is common in Jamaica and other Caribbean islands such as Trinidad and Haiti. It is traditionally made with Amaranth leaves, Cocoyam leaves or Taro leaves.Ingredients:- 2 bunches of Green Amaranth.- 2 medium-sized Carrots- 1 large Onion- 2 sprigs of fresh thyme.- 1 tbsp of All-purpose seasoning.- 1/2 tsp of salt- 1 Green Bell Pepper- 1 Red Bell Pepper- 4 minced Garlic cloves- 2 tbsp of Fat- 1 vegetable stock cube- 2 Scotch Bonnet Peppers.- 2 sticks of Spring Onions
