Here are my 6 and 7 tips on how to make fluffy scrambled eggs:

1. Use a whisk instead of a fork. This will help incorporate air into your eggs making them light and fluffy. You should also whisk the eggs right before they go into the pan. This will make sure that the eggs don't separate. Don't you hate it when you see egg whites in your scrambled eggs?

2. Use a non stick pan that is the correct size for the amount of eggs you are using. I use an 8 inch pan for 3 to 4 eggs. You will still want to use some fat in the pan, like organic butter or coconut oil, for flavor and to make sure the eggs don't stick.

3. Use a heat resistant rubber spatula to stir your eggs. This isn't critical but I like how the spatula conforms to the shape of the pan and makes stirring the eggs easy.

4. Cook the eggs over medium low to low heat. Cooking them on too high of a temperature dries out your eggs. Low and slow is the way to go. You are going to push the eggs from the outside of the pan towards the center of the pan. If your pan starts getting too hot, turn down the heat and/or take the pan off the burner.

5. Add salt at the end of cooking so the salt doesn't make your eggs runny.

6. Warm your plate in the microwave (so you can put warm food on a warm plate) and have your toast already buttered and ready to go. That way when you are cooking the eggs, you can give them your undivided attention.
