How To Make Almond Pancake Recipe Easy & Delicious Rockin Robin Cooks

I love these almond pancakes made with oat and gluten free flour as they are light and fluffly and taste like a pancake should. We've added plain yogurt and eggs along with the almond flour to boost the protein.

Almond Pancakes Recipe
Ingredients:
cup almond flour
cup oat flour
cup gluten free flour, I used Trader Joes
1 tsp. Baking powder
tsp. Cinnamon
Pinch of salt
2 eggs
cup plain yogurt
1 tsp. Vanilla extract
1 Tbsp. maple syrup
Almond milk to thin

Directions:
Heat a griddle or frying pan over medium heat. Add 1 Tbsp. butter and spread it around the pan.

Add spoonfuls of batter to the pan depending on the size of pancakes you want to make. Let them cook and you will notice the bubbles coming to the surface. You can pop them for fun like I do or not.

Once the pancakes look dry on top, check to see if they are golden brown. If so turn them over and cook an additional minute or two until they are golden brown on the second side.

Place cooked pancakes in a dish and place in the oven at 200 degrees F. or lower to keep warm.

Serve these with maple syrup and butter for an awesome breakfast!
