Apple Turnover Recipe

Ingredients:
10 green apples, pippen or Granny Smith, peeled, cored and sliced
- 1 cup sugar, depending on how tart the apples are
1 tbsp. Cornstarch
2 tsp. Ground cinnamon

Pie/turnover crust:
2 cups flour, double sifted
cup of shortening, chilled (Crisco)
1 tsp. Salt
8 to 10 tbsp. Ice water

Directions:
Preheat oven to 425 degrees F.

Place the peeled, cored and sliced apples in a stock pot.
Combine the sugar, cornstarch and cinnamon in a bowl and then pour this mixture over the apples.

Cover and cook on low for about 20 minutes or until the apples have softened, stirring occasionally. When done, remove the lid and let the apples cool a bit.

To make the dough, first off place some wax paper down on the counter to work on. Place 2 or 3 cups of flour into a sifter and sift into a 1 cup measuring cup. Level the flour off with a knife and pour this flour gently into a bowl. Continue doing this until you have sifted 2 and cups into this bowl. Pour the salt over the sifted flour.

Place the sifter into a large bowl and gently spoon the flour into the sifter, sifting all the flour into the large bowl.

Add the shortening to the flour bowl and cut it in with a pastry blender until the flour resembles peas in size. This will take a minute or two.

Then add 8 or 9 tablespoons of the ice water to the bowl and mix it in with a fork. You can add more water by the tablespoons full if needed. Just add a little at a time.

Once the dough comes together somewhat, use your hands to squish the dough together.

Once you have a ball of dough, cut of it off and cover the rest with a damp paper towel.

Add some flour to a cutting board and place the dough on it. Press it down to flatten. Rub flour onto your rolling pin and roll the dough out rolling from the center out. Roll the dough until it is very thin.

Pick up the dough often to make sure its not sticking too much to the board. If it does, lift it off and sprinkle more four underneath and roll again.

You can roll out the dough into square shapes or rectangles. Add a few spoonfuls of apple filling to the center of the dough and roll it up to seal the edges.

Place each turn over onto a baking sheet making sure they dont touch each other. Bake at 425 degrees F. and check them at 20 minutes.

Take them out when they turn golden brown, which can take anywhere from 20 to 25 minutes. You can store these for 4 or 5 days in the refrigerator.
