Flank steak 1 yellow onion, sliced1 red bell pepper, sliced2 tsp. organic buttersalt peppergarlic powderolive oifresh thyme2 Tbsp. white winecorn and flour tortillas depending on your preference. In a large frying pan over high heat, add the oil once its hot and add the onion and bell peppers. Add a bit of salt. Lower the heat a bit to medium. Cook the mixture quick and fast to get a little char. You want the vegetables to have a bit of a crunch still. At the last 3 minutes of cooking add the wine and toss.First we coat our flank steak with olive oil and then salt, pepper and garlic powder. Lay the fresh thyme on top. Press the spices into the meat. Let this marinate for about 1/2 hour.Let the meat sit out before barbecuing for a good hour. Bringing the meat to room temperature will help it to cook evenly.Wipe the bbq grates a little with coconut oil using a rag. This will help keep the meat from sticking to the grates. Cook the steak 3 or 4 minutes per side. Do not over cook or the steak will be tough. After you turn your steak, brush it with a little butter and then turn it again and do the other side. Cook the steak to medium rare.Take the steak off when it's done and let it sit 5 minutes to rest and then slice it across the grain into thin strips. You are ready to assemble your tacos!Heat your tortillas for just a few seconds on the bbq to warm them before assembly. You can use flank steak, skirt steak, flap steak, or brisket for your tacos. You can have any condiments you like. Here are a few examples:tomatillo sauce, avocado, salsacheese (monterey jack, cheddar, cotija, Manchego, even feta is delicious. Use what ever floats your boat.jalapenocilantrolimeetc.Make sure and heat up your tortillas, whether they be corn or flour.
