I love Kerigold butter.Place salted or unsalted butter in a stainless steel sauce or frying pan over medium heat. Stir the butter with either a balloon whisk or a heat resistant spatula pretty consistently. Don't leave the butter unattended as it can burn in a blink of an eye. You will notice the bubbles forming which is the water evaporating from the butter. You'll also notice the milk solids sinking to the bottom of the pan. Those solids are what will brown and give your butter that amazing nutty almost toffee like flavor.Turn the heat down if things are bubbling too crazy. You can always turn it back up. As you are whisking, watch for the browning at the bottom of the pan. Once it turns brown, it's time to take the pan off the heat and pour it into another dish or bowl. If you leave it in the pan it will continue to cook and may even burn.Make sure to scrape all the brown bits out of the pan as those are where all that great flavor is. Let the butter cool for 15 - 20 minutes and then use it in your recipes.
