Not Julius Caesar.In this video, we make our Caesar salad by starting with the dressing in a wooden bowl, then adding and keeping the integrity of the romaine leaf whole.two heads of romaine (use the smaller inside pieces and save the outer pieces to chop for another salad)about 1/4-1/2 cup extra virgin olive oil1 clove garlic, crushedfreshly ground pepperthe juice of one lemon1 teaspoon dijon mustardseveral glugs of worcestershire sauce1 egg1 anchovyabout 1/4 cup of grated parmesan cheesehomemade croutonsin a large wooden bowl, squeeze the lemon juice, add the mustard, anchovy, cheese, egg, worcestershire sauce and garlic. using two forks, press and pull on top of the anchovy, breaking it up into dressing. Slowly add the extra virgin olive oil and whisk. Rinse and spin the lettuce then add the croutons.
