Today I am going to show you how to make Chinese Chicken Fried Rice. It's delicious and easy!

You can even make this gluten free if you want or need to do that. Just make sure your soy sauce and oyster sauce is gluten free. You can find these ingredients at Whole Foods.

It is easiest to make this dish in a wok but I don't have one, yet. But I'm getting one. Cooking stir fry is great and it's a healthy way of eating. But if you don't have a wok you can use a big frying pan.

Also, to make the best chicken fried rice, you need to make your white rice the day before so that the rice won't clump together. So store it in the fridge and break it up with your hand before you cook it in the pan.

Ingredients:
4 cups of cooked white rice
3 Tbsp oyster sauce
2 Tbsp of soy sauce
salt to taste
1 tsp or more of sesame oil
2 cloves of garlic, minced
1 tsp fresh ginger, minced
2 large eggs, beaten
2 Tbsp. peanut or vegetable oil
1 cup frozen peas, or a combination of peas and carrots, thawed
3 green onions, thinly sliced, including the green cups (about 1/2 cup)
1 lb. chicken breast, diced

Directions:
Coat a large, nonstick skillet with nonstick vegetable spray over medium high heat. Add the eggs and scramble until done.

Set aside on a plate. Break up the scrambled egg into small pieces. Add a little oil back to the pan and cook the chicken. Season with salt. Cook until the chicken is completed cooked about 5 to 8 minutes.

Set cooked chicken aside in a clean bowl and keep warm. Add a couple of teaspoons of vegetable oil to the pan over medium high heat and add the green onion, ginger, and garlic. Stir constantly for 1 minute.

Add back the chicken and heat thoroughly. Then stir in the rice, oyster sauce, soy sauce and the egg until well mixed. Add a little salt if you want.

Continue to cook until all the ingredients are hot about 2 minutes or so.

Serve it up and enjoy!
