This sweet chipotle marinade can be used as a marinade for fish, steak, chicken, or pork.

It also has many other uses as well so if you are looking for that smoky sweet spicy flavor, give this a try. It's even great as a hot sauce or salsa with chips.

You can also use it as a chipotle mayonnaise spread by add some to mayonnaise and mixing it in. It's delicious on sandwiches.

Because we are making this from scratch, it does not contain any wheat and is gluten free which cannot be said for the canned version I see in the grocery store.

The beauty of this recipe is that you can customize it any way you want. Whether you want it more sweet or spicy hot, you are in control.

You can add more brown sugar if you like it sweeter or you can even use honey if you like.

To control the spicy heat, add more or less of the chipotle chiles.

Chipotle marinade

Ingredients

12 or more dried chipotle peppers
3 cups water
6 Tbsp tomato paste
1 tsp . salt
2 tsp. garlic powder
2 Tbsp. apple cider vinegar
2 to 3 Tbsp. packed brown sugar, or to taste
2 tsp. chile powder
cup diced red onion
tsp. ground cinnamon
1/8 tsp. ground cloves
1/8 tsp. ground nutmeg

Directions:
Place all the ingredients except the brown sugar in a sauce pan and bring to a boil. Once it boils, lower the heat to simmer and cover for about an hour.

Remove from heat and let the sauce cool. Once cool, place the sauce in a blender. Then add the brown sugar and stir it until combined.

Enjoy!


When I am marinating meat or shrimp, I tend to add just a little olive oil to the sauce to help keep things from sticking on the grill or barbecue.
