In this episode, I am going to show you how to make cowboy cookies. This recipe was given to me by my husbands grandmother, a sweet little old Italian lady. She would make these cookies for us when we would go on road trips.

The cookies never even made it to our destination as we gobbled them up as fast as we could. They are yummy.

Ingredients:

1 cup butter, softened
1 cup brown sugar, packed
1 cup sugar
2 1/2 cups rolled oats
2 cups flour
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla extract
1 cup chocolate chips
1 cup walnuts, chopped very fine

Preheat oven to 350 degrees F.

Cream the butter and sugars together, add the eggs and vanilla. Sprinkle in the flour, baking soda, salt mixture, a little at a time and stir. Stir in walnuts then chips.

Drop by spoonfuls on a parchment paper lined baking sheet. Bake for 15 minutes or longer. The longer you bake them the crispier they will get.
