How to make Egusi Soup Recipe

Egusi soup is a rich and flavorful Nigerian soup that is made with ground melon seeds, assorted meat/fish and, a handful of fresh vegetables.

This soup has been one of my best dishes so far because it is really easy to make from scratch and also pairs well with a couple of other food.

Some of the things that you can pair with egusi soup include: pounded yam, fufu, garri, boiled rice, plantain, yam and, semolina.

You can try making this delicious egusi soup at home with very few ingredients as listed below.

Ingredients:
3 cups egusi seeds, (ground with onion into a creamy paste)
1 kg goat meat
1 kg beef
1 head of stockfish
2 large dried catfish
1 and 1/2 cup palm oil
3 medium-sized onions
3 tbsp ground crayfish
4 small beef stock cubes
1 tsp crushed scotch bonnet pepper
1 cup waterleaf, chopped
3 tbsp Uziza leaf, chopped
1salt to taste
