Sugar, or more to taste1 cup cucumber, skin removed, sliced and chopped1 or more jalapeno, deseeded, chopped fine cup red onion, finely chopped tsp. SaltZest from 1 limeJuice from of a lime2 tsp. Balsamic vinegar cup or more of walnuts, choppedDirections:Place the cherries and sugar into a bowl and stir. Add the cucumber, jalapeno, onion, zest and juice from a lime, the salt, and the balsamic vinegar and stir to combine. Chill the salsa for hour and then add the walnuts and stir right before serving.This salsa goes with just about any protein, chicken, fish and beef.
