Gordita Beef and Cheesy Tacos

These tacos are a quick and easy dinner to put on the table any night of the week. Make these from scratch and they are way tastier and healthier than anything you can buy from a restaurant.

Ingredients:
1 lb. ground beef, grass fed
3 Tbsp. Rockin Robin's taco seasoning blend (link above)
grated Mexican cheese blend
shredded ice burg lettuce
Butter, grass fed
corn tortillas
flour tortillas, similar in size to the corn tortillas
vegetable oil
Directions:

Place the ground beef in a frying pan over medium heat. Break up the beef as it cooks with a wooden spoon. Drain the excess grease and then place 3 tablespoons of the taco seasoning in the pan.

Add about cup of water to the meat and stir. Simmer for about 10 minutes.

In a grill or frying pan, place 1 tsp of butter in the bottom of the pan and lay a flour tortilla on top of the butter. Place the temperature on low. Sprinkle a fair amount of cheese on the tortilla leaving about inch of space around the edge of the tortilla. This should heat up and melt the cheese slowly.

In a small frying pan (about 8 inch in diameter) pour in about to inch deep of oil and heat over medium high heat.

Once the oil is shimmering, lay one corn tortilla into the oil. It will/should bubble up right away. Turn the tortilla over with tongs.

As it cooks it will begin to stiffen up a bit. Fold the tortilla over in half. Use your tongs to keep the tortilla open in the middle so that when it hardens with cooking, you will still be able to place the ground beef inside of it.

Keep turning over the taco shell, keeping the middle open as it cooks. When it almost stops bubbling and gets crunchy, drain off the grease and place the shell on a paper towel to cool a bit.

By now that flour tortilla and cheese should be nice and melty. Place your crispy corn tortilla in the center of the cheesy tortilla and fill the corn tortilla with a scoop of hot ground beef.

Then add a layer of shredded lettuce, sour cream, and then guacamole. You could even top with more shredded cheese if you like.

Bring the edges of the flour tortilla and melted cheese up around the corn tortilla and take a bite. Yum!
