How to make Greek Ekmek Kataifi

This is a demo on how to make Ekmek Kataifi! Enjoy!
*Recipe*
Ingredients for the syrup:
1) 1 1/2 cups of sugar
2) 1 1/2 cups of water
Ingredients for the base:
1) Spring form pan or baking dish
2) 1/2 package of phyllo kataifi pastry
3) 5 tbsp of melted unsalted butter
Ingredients for the pastry cream:
1) 5 egg yolks
2) 2/3 cup sugar
3) 1/4 cups flour
4) 1/8 tsp salt
5) 1 1/2 cups of milk
6) 1 tbsp vanilla extract
7) 1 tbsp unsalted butter
Ingredients for the whipped cream:
1) 3 cups of cold heavy whipping cream
2) 1/2 1 cup of powdered sugar (depending on how sweet you want it)
3) 1 tbsp vanilla extract
How to make the syrup:
1. Add the water and sugar to a pot and boil until the sugar has dissolved. Take off the heat and let it cool completely.
How to make the base:
1. Butter the bottom and sides of a springform pan or baking dish.
2. Add in the kataifi pastry, shredding it with your hands.
3. Pour the butter over all of it and bake in a 400-degree oven for 20 minutes or until golden brown.
How to make the pastry cream:
1. In a pot over medium-low heat, add in the milk, sugar, flour and salt and mix until the flour chunks have broken down.
2. In a separate bowl, whisk the egg yolks together until they become lighter in color.
3. Once the milk mixture has heated up a little, slowly in a steady stream add it into the egg yolks, so it can temper them. Make sure you are whisking the mixture constantly because it can scramble the eggs.
4. After the eggs have been tempered add the mixture back into the pot, add the vanilla extract and heat slowly until it thickens and begins to boil. Once again, make sure you are whisking continuously because the eggs will scramble if you dont.
5. When it thickens and begins to boil, take it off the heat and pour the mixture through a sieve just to make sure you take out any eggs bits that make have cooked.
6. Add in the butter and stir until it is melted.
7. Place plastic wrap over the cream, making sure it is touching the top so a skin doesnt form and cool it in the refrigerator completely.
How to make the whipped cream:
1. In a stand mixer add the cold heavy whipping cream, powdered sugar and vanilla extract and whip until it gets thick.
Assembly:
1. While everything is cooling, add the syrup over the kataifi based that has cooked and let it soak.
2. After the cream has cooled, pour it over the base and spread it out so its even.
3. Place the whipped cream over the pastry cream and spread out.
4. Top it with chopped walnuts or pistachios.
5. Serve cold!
