I'm add a cup of white rice so you can call this chicken and rice soup. What I love about this recipe is that it is so flexible. You can but what ever you want in it. Literally. What makes it so good and good for you is the chicken. The longer you boil the chicken, them more intense the broth becomes. So if you wanted to make this with just a few ingredients you should include the chicken of course but also the onion, celery, carrots and salt. They make up the base for this soup. After that it is up to you.Ingredients:1 whole chicken, organic preferred1 onion, diced4 carrots sliced3 celery stalks, sliced1 zucchini, sliced3 to 4 small red potatoes, cut into chunks1 sweet potato or yam, peeled and cut into chunks1 cup of white or brown rice2 cups frozen peasa small handful of fresh basil leaves, chiffonadea small handful of fresh Italian parsley, chopped1 cup of fresh green beans, washed and trimmed, cut into bite size piecessalt to tasteDirections:Place the chicken into a large stock pot and with enough water to cover the chicken by 1 to 2 inches.Place a cover on the pot and bring to a boil over high heat. Once it comes to a boil, reduce the heat and simmer with the lid on.In the meantime, chop all of your vegetables. Add the onion and celery first. Then add the sweet potatoes, red potatoes, and carrots. Then add the rice, basil, parsley and green beans.Let everything simmer with the lid partially on for anywhere from 35 minutes to an hour. Remember, the longer the better.Remove the chicken from the pot and place in a dish to cool. Add the peas and zucchini during the last 10 minutes of cooking before you place the cut up chicken back to the pot.Once the chicken is cool enough to handle, remove the skin and bones and either shred or cut the chicken into bite size chunks and place it back into the soup.
