How to make Homemade Egg Drop Soup/made with a Kid

Egg drop soup is super simple to make and it's delicious. There are different variations on how to make it. You can add additional ingredients to the one we prepare here.

This is our simple take on it.

4 cups Chicken stock or broth
8 oz. soft tofu, cut into small cubes
2 egg yolks
2 tablespoons of low soy sauce
4 scallions, thinly sliced
2 tablespoons, cornstarch
pinch of white or crushed pepper

other optional ingredients: ginger, mushrooms, chicken, anise

in a pot, simmer the chicken stock.

Add the tofu and scallions and soy sauce to the pot of stock. If using "optional" ingredients, add them now.

take about 1/4 cup of the stock and add to a mixing bowl. Mix 1 tablespoon of cornstarch with the 1/4 cup stock, then add it back to the soup.

Gently beat the egg yolks. Add one tablespoon of cornstarch to the egg mixture.

With stock just above a simmer, and using a rubber spatula, slowly add the egg mixture to the soup.

Season with crushed or white pepper and enjoy!
