Egg drop soup is super simple to make and it's delicious. There are different variations on how to make it. You can add additional ingredients to the one we prepare here.This is our simple take on it.4 cups Chicken stock or broth8 oz. soft tofu, cut into small cubes2 egg yolks2 tablespoons of low soy sauce4 scallions, thinly sliced2 tablespoons, cornstarchpinch of white or crushed pepperother optional ingredients: ginger, mushrooms, chicken, anise in a pot, simmer the chicken stock. Add the tofu and scallions and soy sauce to the pot of stock. If using "optional" ingredients, add them now.take about 1/4 cup of the stock and add to a mixing bowl. Mix 1 tablespoon of cornstarch with the 1/4 cup stock, then add it back to the soup. Gently beat the egg yolks. Add one tablespoon of cornstarch to the egg mixture.
