Melomokarona are one of my favorite Greek cookies, so I decided to transform the cookies into cupcake form because why not!Recipe:For the cupcakes-1. 1 stick (softened) unsalted butter2. 1 1/2 cups flour3. 1 cup sugar4. 1/2 tsp ground cloves5. 1 tsp cinnamon6. 1 tsp baking powder7. 2 eggs8. 1/2 cup milk9. 1 tsp vanilla extract10. Zest from 1 orangeFor the buttercream-1. 1/2 cup (softened) unsalted butter2. 2 cups powdered sugar3. 1 1/2 tsp vanilla extract4. 3 tsp honey5. 1 1/2 tbsp milk- Ground walnuts for the tops of the cupcakesHow to make the cupcakes:1) In a bowl whisk together the flour, baking powder, ground cloves and cinnamon together and set aside2) Cream the butter and sugar together3) Add the eggs, one at a time4) Add the vanilla extract5) Add the zest from the orange6) Add in the flour mixture a little at a time. In between adding the flour mixture, add the milk a bit at a time. Switch between the two and end with the dry ingredients7) Preheat the oven to 350 degrees8) Pour the batter into greased cupcakes liners in a cupcake baking sheet about 3/4 of the way up9) Bake for 20 minutes, remove them from the oven and let the cupcakes cool completely on a wire rack.How to make the buttercream:1) Cream the butter and powdered sugar together2) Add the vanilla extract, the honey and then the milk and mix until smooth- Once the cupcakes are cooled with a piping bag and big piping tip, frost the cupcakes and put the ground walnuts on top.Enjoy!
