How to make a 6 minutes Broiled Salmon Recipe/made with a Kid

Salmon is high in Omega 3 fatty acids. The good fats! High in protein and very healthy.

here is our recipe for this 6 minute "broiled" salmon
(Feeds two people)

2 6oz. pieces of Atlantic salmon with skin (we used wild)
1 fennel bulb (save fronds for garnish)
2 T extra virgin olive oil
s&p to tast
pinch of cumin (optional)

for the green herby sauce
small bunch of basil
small bunch of parsley
3 mint leaves
1/4 cup extra virgin olive oil
squeeze of lemon juice
pinch of salt
(for those who like spicy, try adding a small piece of jalapeo)


Preheat broiler on "HIGH"
Using parchment paper and a oven tray, add the salmon, skin side down.
Brush olive oil all over the salmon. This acts as an adhesive. Generously sprinkle salt all around salmon and add cracked pepper. If using cumin, we added only to the top of salmon. You don't want to overpower the salmon with too much cumin.

Cut off tops of fennel fronds. Do not cut the bottom of the fennel. Slice fennel into 1/2" pieces and layer around salmon. Brush olive oil and add salt and pepper to both sides.

On top rack, add the salmon and fennel and set the timer for 6 minutes. (no need to flip!)

While that cooks, add the herbs, garlic, evoo, lemon juice and salt to a mortar and pestle or food processor and blend it up. I like it rustic so keep it chunky in places.

Once the salmon and fennel are done, lay it over the fennel fronds. Spoon over some of that lovely looking herby sauce and serve.
