How to Make Nigerian Fufu from Delta

Fufu is an African food that originated from Nigeria and is made with cassava flour (tapioca). The Nigerian fufu is also called "Usi" and is prepared by grating cassava to form a paste. The cassava is then strained to collect liquid, which is allowed to sediment. The sediment is then cooked on heat by continuous stirring until you have a thick solid called "Fufu".
