Use a ribeye steak and place in the freezer to firm up before slicing, about 15 min. Makes slicing super easy.2. Caramelize the onion for 45 minutes. Makes all the difference.3. Butter the bread before toasting the bread. Makes it yummier!Ingredients:1 ribeye steak will make about 2 sandwiches2 -3 slices of provolone cheese2 large yellow onion, thinly sliced2 hoagie rolls or any soft roll will do to 1 tsp. Garlic powderSalt to tastepepperOlive oiButter Directions:Place the ribeye steak, covered, into the freezer for anywhere between 35 and 45 minutes. In the meantime, slice the onion in half and then make fairly thin slices.Take a cast iron pan over medium high heat and add about 2 Tbsp. of olive oil. Once is shimmers add the onion. After about 3 minutes, lower the temperature to medium low to low and saute them stirring frequently for 45 minutes. Remember low and slow.Once the steak is firm but not frozen, take it out and thinly slice the beef across the grain. The thinner the better. Discard any large pieces of fat.Once the onion are properly caramelized, remove them to a bowl and keep warm. Take a moment now to prepare the bread for our sandwich.Slice the roll in half, lengthwise, and spread a light coating of butter over each piece. Preheat a different pan, I used a comal, and place the bread, butter side down into the pan. Watch it closely and toast the bread to a nice golden brown and then place it on your serving dish.Back to the original pan. Turn the heat to medium high and add a tsp of olive oil. Once hot, add the beef, salt, garlic powder, and pepper. Cook the meat stirring frequently until the pink has almost disappeared, about 3 to 4 minutes.Add the onion back to the meat pan and toss to reheat. Lower the heat to low and portion out the meat in the pan for 2 sandwiches and add the cheese to the two piles of beef. Place a lid to the pan (this will help the cheese melt quicker).
