How To Make Rice Pudding - A Creamy And Easy Dessert Rockin Robin Cooks

Rice pudding is such a comfort food. I show how to make this dessert using arborio rice which is the same rice you would use to make risotto. It makes your dish nice and creamy so it works perfectly in rice pudding.

We want it nice and creamy right? Well arborio rice does the trick.

With this kind of rice you will be doing a bit of stirring at the end. But it's worth it.

Ingredients:
1 cup arborio rice
4 1/2 cups whole milk
1/2 cup of half and half
pinch of salt
1/4 cup sugar
1/4 cup packed brown sugar
1 tsp. or more vanilla extract
1 cinnamon stick

Place the rice, milk, half and half, salt, cinnamon stick and sugars into a large pot over medium high heat.

Stir to dissolve sugars. Once mixture just comes to a boil, reduce to a simmer and cover for 25 minutes. Stir the pot every 5 minutes.

Once done, remove lid, stir over low heat until pudding thickens to your liking.
Next add the vanilla and raisins if you are adding those. Stir to combine and eat warm.

I like it's best when it's warm. You can also put it in the fridge and eat this chilled if you like. You may want to add a little extra milk to thin it out as it gets a bit thick when it's cold.

When storing this in the refrigerator, be sure and place plastic wrap on it. Make sure the plastic wrap touches the pudding to keep a skin from forming. If you don't like plastic touching your food, lay a piece of wax paper on top of the pudding first, then cover with plastic wrap.
