How To Make Roasted Carrots Agrodolce Easy To Make Rockin Flavor!

Roasted carrots with agrodolce sauce is amazing. You've got this sweet and sour sauce of champagne vinegar, citrus, maple syrup, olive oil marinating the carrots as they cook.

We add a little maple syrup and balsamic vinegar for a little sweetness and tang. When these come out of the oven, they are topped with crumbled feta cheese and toasted almonds. Makes a great side dish!

Carrots Agrodolce Recipe
Ingredients:
1 lbs carrots, peeled, and cut into chunks
4 Tbsp. olive oil
1 Tbsp. champagne vinegar
1 Tbsp. + 1 tsp. fresh orange juice
2 Tbsp. fresh lemon juice
1 Tbsp. butter, melted
cup crumbled feta cheese
cup sliced almonds, toasted in a pan on the stove
2 tsp. Balsamic vinegar
2 tsp. Maple syrup

Directions:
Preheat oven to 425 degree F.

In a relatively small baking dish, add the olive oil, champagne vinegar, butter, orange and lemon juice and whisk to combine.

Add the carrots and stir to coat them.

Place the carrots in a 425 degree F. oven for 20 minutes. After 20 minutes stir to coat the carrots. At 40 minutes, stir again and take a fork and poke the carrots to see how close to being done they are. They should be getting soft.

Add the balsamic vinegar and maple syrup and stir to combine with the carrots. Put them back in the oven for an additional 15 to 20 minutes.

When the carrots are soft, take them out of the oven and add a sprinkle of feta cheese and the almonds.
