How To Make Salsa Sweet Tomato Salsa Recipe Rockin Robin Cooks

This sweet tomato salsa has just the right amount of sweetness, due to using a pureed mango. You can adjust the heat to your liking by varying the type and amount of chile peppers you use. This recipe uses almost all fresh ingredients.

This salsa is perfect on scrambled eggs, tacos, burritos, chicken, fish and anything else you can think of.

Sweet Tomato Salsa Recipe

Ingredients:
2 stalks of celery, diced small
5 Roma tomatoes, diced small
1 mango, cut into chunks
1 or more chile peppers, I used poblano. Jalapeno or any pepper can be used
yellow onion, diced small
2 Tbsp. tomato paste
2 Tbsp. apple cider vinegar
tsp. Ground coriander
tsp. Garlic powder

Directions:
Roast whichever type of pepper you like. Place it directly over a gas flame, as in the video, rotating the pepper with tongs as it blackens. Once the entire pepper is blackened, place it in a bowl and cover so that it will steam, for 10 to 15 minutes.

After steaming the pepper, remove the blackened skin by rubbing the pepper with paper towels. Slice open the pepper and remove any seeds and the stem. Leave them in if you like it hot. Chop the pepper into a small dice.

Slice the mango into chunks and place it in a blender. Add just enough water so that the mango will puree into a nice thick sauce.

Place all the ingredients into a saucepan and heat over medium high heat. Bring the salsa to a boil and then lower the heat to a simmer, cover, and cook for a 1 to 1 hours.

Cool the salsa at room temperature and then place in the fridge. It should last a week. Maybe more.
