Kids will love this!Brussels sprouts are pretty common when halved or quartered then roasted in the oven and sometimes with the addition of bacon. In this recipe and episode, we do a brussels chiffonade, or shaved brussels sprouts with the addition of parmesan cheese, prosciutto, lemon, panko bread crumbs and pomegranate seeds. Mmmmm, so delicious!1 1/2 Ibls brussels srpouts1 shallot2 or 3 slices of prosciutto1/2 to 1 lemon, juiced and zested1/4 cup panko1/4 cup pomegranate seedsparmesan cheese, shaved (as much as you want)Extra virgin olive oil, glugknob of butters & p to tasteoptional: fresh seasonal herbs i.e. thyme, parsley, sagebring a pot of water to boil, add a pinch of salt, and drop in the brussels sprouts for a few minutes and drain and drop in ice water or rinse under cold water. This will "shock" or stop the cooking process, keeping a nice green color to any green veggie. Pat dry, cut off bottom stems, and chiffonade. https://www.youtube.com/watch?v=8firWVniU0Qin a pan, add a small glug of olive oil, heat up on medium/low heat, add sliced shallot, and brown, then put to the side.roll up prosciutto, slice, and add to pan to crisp up. put to the side.add plug of olive oil to the same pan, add shaved brussels sprouts and heat up. Browning is a good thing! I add the panko bread crumbs here with a knob of butter.right before taking out of the pan, add the shallot and prosciutto and evenly mix it together.
