Smash Burgers Recipe
Ingredients:
80/20 grass fed hamburger
1 large yellow onion, sliced inch thick
Kraft American Cheese, 1 slice per burger
Butter, 2 tsp. Per burger
Avocado oil
Olive oil
Salt
Pepper
Garlic powder

Super Simple Secret Sauce
cup avocado mayonnaise
cup ketchup
2 tsp. Yellow mustard
2 tsp. Or more of Tabasco Sauce Chipotle flavor

Tools:
Cast iron pan and or griddle
Metal spatula
Food scale
Metal cast iron bacon press or use two heavy metal spatulas
Parchment paper cut into 8 inch square pieces, wax paper will work in a pinch

Directions:
Place your cast iron pan over medium heat. Add 1 tbsp. Of olive oil and add the onion. Stir frequently and cook for 30 minutes until the onions are caramelized and a nice golden brown. Lower the temperature as they cook. Keep warm.

Next make the secret sauce by combining all the ingredients for the sauce in a small bowl and whisk to combine. Cover and place in the refrigerator til needed.

Take the ground beef and weigh out 2.5 to 3 ounce portions. Form into balls but dont pack the meat tight.

Start preheating your grill over medium high heat. It must be smokin hot before you start cooking burgers.

Its time to prepare the buns for the smash burgers. Spread a light layer of butter on both the top and bottom bun and place it in a cast iron pan or the grill to brown up. Once golden brown set aside.

Now we are ready to start grilling the burgers. Remember, they only take 2 to 2 minutes to completely cook so you will be moving quickly. That is why it is important to have everything you need laid out and ready to go.

Once your grill is smoking hot, pour 2 tsp of avocado oil on the grill. I used my spatula to spread out the oil.

Place about 1 tsp. Of butter onto the grill and lay a round burger on top of the butter. Lay a piece of parchment paper over the top of the meat ball and press with the bacon press until the hamburger is very flat, about inch thick. Hold the press on the burger for 10 seconds. This will give it the good sear it needs to be delicious.

Then remove the press and the paper and proceed to do the second burger the same way. Season both burgers with salt, pepper and garlic salt.

Once you see the fat rising on the burger and the edges are getting crispy (about 1 - 1 minutes) use the metal spatula to scrape and release the crust from the bottom of the burger.

Flip the smashburger and then immediately top with a slice of cheese. Cook an additional minute or until the cheese is melted. Place a dollop of chipotle secret sauce on the bottom bun, topped with 2 cheese burgers, caramelized onion and another drizzle of secret sauce. Cover with the top bun and get ready to enjoy the best burger youll ever have!
