Spanish Omelette Recipe
Ingredients:
2 gold potatoes, peeled and sliced inch thin, pat dry with paper towels
1 sweet potato, sliced inch thin
1 yellow onion, sliced thin
5 eggs
Salt garlic powder
17 oz. Olive oil

Directions:
Preheat a 10 inch non stick fry pan over medium low heat and place the olive oil in it. Once the oil is hot, add the onions and submerge them. Cook the onions for about 5 - 6 minutes stirring occasionally. Make sure the onions look like they are simmering (bubbling) in the oil.

Then add the potatoes and turn up the heat to medium high. Adding the potatoes will cause the temperature of the oil to drop so that is why we turn it up. Continue to cook the potatoes for 10 to 15 minutes or until they are fork tender.

In the meantime, add the eggs, salt and garlic powder to a large bowl and whisk them up.

When the potatoes are done, drain the oil from them and place them in the eggs. Stir to coat. Cover the bowl with saran wrap and let the mixture sit for 15 minutes to thicken up.

Pour the leftover oil from cooking the potatoes into a container with a spout and let cool. Take the same frying pan and place it on medium heat, leaving a little oil in the pan.

Pour the potato mixture into the pan and press the egg mixture into the pan evenly. Let the omelete cook for 3 to 4 minutes on medium low heat. This is where you shake your moracha and have some fun!

After 3 minutes, check the omelette and see if its a nice golden brown by lifting one edge. Place a plate over the top of the frying pan and turn it over so the omelette is on the plate.
Then carefully slide the omelete back into the frying pan to cook the other side for about 3 minutes.

The ultimate Spanish omelette is for the outside to be a nice golden brown while the inside is moist.
