How to make Super Easy, Cheesy Homemade Enchiladas

These "easy cheesy enchiladas" are simple and fun to make with the kids. Add chicken or beans to give it more protein. Or try using corn tortillas instead of flour.

Easy Cheesy Enchiladas
Prep Time: 25 minutes
Cook Time: 20 minutes
Yield: 8-10 servings

1Tbsp garlic powder
1Tbsp onion powder
1Tbsp ground cumin
2 tsp chili powder
4 Tbsp flour
1 Tbsp olive oil
4 cups chicken broth
1 8 oz. can tomato sauce (oops, we used 28, but it was still yummy!)
10 flour tortillas (we used corn)
4 cups shredded Mexican-blend cheese
1 bunch cilantro

add all the dry ingredients and olive oil to a small pot

whisk the mixture over medium high heat for 2 minutes.

Slowly whisk in broth and tomato sauce. Bring to boil.
simmer over medium heat for 5 minutes. Set aside and cool.
preheat oven to 350 F. Pour 1 cup sauce into baking sheet. Next, assemble enchiladas. Set tortilla on plate. Smear 1-2 Tbsp (depending on side of tortillas) sauce on top. Sprinkle 1/3 cup cheese across the center of tortilla. Fold bottom edge over the cheese and roll. Place in pan with the seam facing down. Repeat, making a long row of tightly packed enchiladas. Pour remaining sauce on top. Sprinkle with cheese. Bake 20 minutes. Cool for 5 minutes. Garnish with minced cilantro.

Since we added more sauce, our's came out a little saucier but it was still amazing!
