If you like Salmon, try making a chowder out of it. And if you ever get to Seattle, be sure to check out Pike Place market and watch them throw the salmon. make sure to take pics! Salmon is rich in Omega 3 polyunsaturated fat which is a great source of protein. Serves 61/2 lb. red potatoes, cubed1/2 lb. sliced bacon, cut into 1/2 pieces1 medium yellow onion3 cloves of garlic, chopped1 cup frozen or fresh corn kernels1 lb. wild salmon cut into 1 pieces1 1/2 cups whole milk1 1/2 cups fish stock3/4 cup heavy creamSmall bunch of fresh herbs like dill, parsley and thymeSalt and pepper to taste1 bay leafJuice from 1/2 a lemonCut potatoes (with skin) into 1/2 cubes, cook in salted boiling water about 8 minutes, drain and put aside.Cook bacon in heavy pot over medium heat, stirring until crispy. Transfer to paper towels with a slotted spoon. Add the onion and garlic to bacon grease and cook till it becomes translucent, about 5 minutes. Add the corn and bay leaf and continue to cook for a few minutes. Add the milk, fish stock, and cream and bring to a boil. Bring to a simmer and add potatoes, bacon and seasoning, adding only a little at a time. Remember, the bacon is already salty, so gauge as you go. Cook until the salmon is cooked through, about 6-8 minutes. Discard bay leaf, give a generous squeeze of lemon juice. I like a pinch of smoked sea salt and a couple shakes of tabasco in my salmon chowder.
