How to make the Best Homemade SALMON CHOWDER made with a Kid

If you like Salmon, try making a chowder out of it. And if you ever get to Seattle, be sure to check out Pike Place market and watch them throw the salmon. make sure to take pics!

Salmon is rich in Omega 3 polyunsaturated fat which is a great source of protein.

Serves 6

1/2 lb. red potatoes, cubed
1/2 lb. sliced bacon, cut into 1/2 pieces
1 medium yellow onion
3 cloves of garlic, chopped
1 cup frozen or fresh corn kernels
1 lb. wild salmon cut into 1 pieces
1 1/2 cups whole milk
1 1/2 cups fish stock
3/4 cup heavy cream
Small bunch of fresh herbs like dill, parsley and thyme
Salt and pepper to taste
1 bay leaf
Juice from 1/2 a lemon
Cut potatoes (with skin) into 1/2 cubes, cook in salted boiling water about 8 minutes, drain and put aside.

Cook bacon in heavy pot over medium heat, stirring until crispy. Transfer to paper towels with a slotted spoon. Add the onion and garlic to bacon grease and cook till it becomes translucent, about 5 minutes. Add the corn and bay leaf and continue to cook for a few minutes. Add the milk, fish stock, and cream and bring to a boil. Bring to a simmer and add potatoes, bacon and seasoning, adding only a little at a time. Remember, the bacon is already salty, so gauge as you go. Cook until the salmon is cooked through, about 6-8 minutes. Discard bay leaf, give a generous squeeze of lemon juice. I like a pinch of smoked sea salt and a couple shakes of tabasco in my salmon chowder. Yum!

Top with fresh herbs.
