Tuna Casserole Recipe
Ingredients:
6 oz. of noodles, I used gluten free Banza
1 yellow onion, super fine dice
1 large organic celery stalk, super fine dice
4 baby bella mushrooms, super fine dice or sliced
1 tbsp. Olive oil
1 can of skip jack tuna, drained and crumbled
1 tsp. Freshly chopped thyme
cup white wine, optional
1 cup 2 % milk, or coconut milk
4 - 5 oz. sharp cheddar cheese, grated
1 cup chicken broth
3 Tbsp. Bobs Red Mill 1 to 1 gluten free baking flour
1 cup frozen peas
Garlic powder
Salt
Pepper
Avocado oil spray

Topping:
cup Aleias Gluten Free Italian bread crumbs
4 Tbsp. parmesan cheese, grated
1 Tbsp, melted butter

Directions:
Preheat oven 375 degrees F.

In a large pan over medium high heat, add the olive oil, onion, celery, and mushrooms and stir until softened, about 10 minutes. Season with salt, garlic powder, and pepper.

At the same time, cook the noodles according to package instructions, then drain and rinse.

Once the onion mixture is softened, add the thyme and cook for 2 minutes. While waiting, pour the flour into the chicken broth and whisk to combine.

Add the wine to the onion mixture and stir for 3 minutes. Then add the flour/chicken broth mixture to the onions and whisk until combined. Cook for 2 minutes until thickened and stir frequently.

Then add the milk, garlic powder, salt, pepper, tuna, cheese, pasta, and peas while stirring with each new addition.

Pour the tuna casserole into a 10 x 10 baking dish.
Combine the bread crumbs, parmesan cheese and melted butter and stir until combined and the mixture resembles wet sand. Sprinkle this over the casserole and bake in a 375 degree F. oven uncovered for 15 - 20 minutes or until bubbles form around the edges of the dish and the topping is a golden brown.

You can place the casserole under the broiler at least 6 inches away to brown and crisp up the topping.

Let the casserole sit for 10 minutes before serving. Enjoy!
