HOW TO MAKE TOUGH MEAT TENDER

In this episode, I'd like share with you how we usually make tough meat tender and tasty at home. Muscles that work more in the animal are tougher than those are used less. Such as shoulder, neck and legs. But there are some things you can do to tenderize them. And there are also spices to give your meat delicious flavour.

INGREDIENTS

1 cup sunflower oil
Juice of one lemon
1/3 cup soy sauce
1/4 cup vinegar
1 real tablespoonful brown sugar
1 tsp Dijon mustard
Salt&Pepper
1 tbsp smoked paprika
1 tsp dried thyme
1 tsp dried rosemary
1 onion (coarsely chopped)

DIRECTIONS

Pour the fresh lemon juice into a big bowl.
A key ingredient in most marinades is acid, that breaks down the meat.
Stir in the soy sauce and vinegar.
Stir in oil, the perfect vehicle for delivering the flavour of spices into the meat.
Add sugar to balance acidity.
To add flavour start with mustard and smoked paprika.
Also add hot pepper, if desired.
Add the thyme and rosemary then stir,
Do not add too much rosemary or thyme!
1/2 tsp salt and freshly ground black pepper.
Finally stir in chopped onion. You can also add 2-3 cloves of garlic if desired.
You can refrigerate the marinade until needed.
Meat can sit in this asidic marinade for 2-4 hours in the refrigerator or 30 minutes at room temperature.
Before marinating poke holes with a fork in the meat, to let the marinade in. On both sides.
Add the meat to the marinade then turn to coat and transfer into a container.
Repeat the process for all the pieces.
Then pour the marinade all over the meat, making sure they are well covered.
If you can't completely cover the meat, turn it over occasionally in the marinade.
This recipe makes enough marinade for about 1 1/2 kg. (3.3 pounds) of meat.
Take the meat out of the fridge 30 minutes before cooking and let it come up to room temp.
Remove meat, discard the marinade and pat dry.
Then grill, bake, fry or otherwise cook the meat according to your recipe.
