Vegetable Soup Recipe
Ingredients:
1 14 ounce can of white Northern Beans, drained and rinsed
2 stalks celery, sliced
2 - 3 carrots, peeled and sliced
large yellow onion, super fine dice
1 large handful of chard, chopped
3 cloves garlic, minced
10 leaves of fresh basil, stacked, rolled and chopped
2 (4 inch) stems of thyme, chopped
2 large leaves of sage, stacked, rolled and chopped
1 yellow bell pepper, chopped
cup heaping pesto sauce, store bought
5 cups of chicken or vegetable broth
1 - 2 Tbsp. olive oil
salt

Directions:
In a large frying pan over medium high heat, add the olive oil. Once hot add the onion, celery, bell pepper and carrots. Saute for 10 minutes stirring frequently.

Add the minced garlic and saute for 1 minute longer. Add this mixture to a stock pot.

Add all the other ingredients to the stock pot except the chard and then bring the soup to a boil and lower the temperature to simmer, covered for 10 minutes.

Then add the chard and simmer covered for an additional 2 to 3 minutes.

2 Flavor Tips:
1. Saute the onion, celery, bell pepper and carrot in olive oil for 10 mintues.
2. Use fresh herbs only.
