Thank you very much for your support! ~ Rockin RobinThis recipe is easily gluten free by substituting gluten free noodles.Pasta Carbonara RecipeIngredients:10 - 12 ounces pasta5 - 6 slices of uncured smoked bacon, chopped into small pieces ( to inch)3 cloves garlic, finely chopped1 lb. ground turkey1 tsp. Italian seasoning: https://youtu.be/6rwFpuskQr81 tsp salt2 pastured eggs - 1 cup pecorino romano cheese, finely gratedPepperOlive oilBroccoli or other vegetable of choice - cup pasta waterDirections:In a medium bowl add the ground turkey, Italian seasoning and salt and mix with your hands to combine well. Form 1 inch meatballs out of the turkey and set on a plate. Heat a stockpot with water to cook the noodles.To a frying pan, add 1 tsp. of olive oil over medium heat. Once hot add the meatballs and cook until browned and not pink inside. The internal temperature should be 165 degrees F.Place the meatballs in a dish and keep warm. Depending on how long your pasta takes to cook, time it so the noodles and bacon are done at approximately the same time along with your steamed broccoli. Did I mention to place your broccoli in a steamer for 10 minutes or until you get the doneness you like? Wipe out any excess leftovers in the frying pan with a paper towel. Place the pan back on low heat and add the bacon. Cook until done but not crispy about 10 minutes.With about 2 to 3 minutes left of cooking the bacon, add the garlic to the pan and stir. All of this is on low heat. Dont burn the garlic.Whisk the eggs in a bowl and then add the pecorino and whisk with a fork. Once the pasta is done, turn off the heat. Do not drain the noodles. Turn off the bacon and garlic mixture in the frying pan.Place the pasta pan next to the frying pan with the bacon and use tongs to transfer the pasta noodles to the frying pan. Dont drain the pasta before adding to the pan. Just toss the noodles and water that comes with them right in the pan.You should hear a sizzle when you do this. Add a 1/3 cup more of the pasta water to the fry pan. Toss everything together.Give the egg mixture one more mix before add it to the frying pan. Toss quickly and add a bit more pasta water if the sauce is not thin enough. Keep tossing until all the noodles are coated and add the meatballs and toss again. Add more pasta water as needed to keep the sauce the right consistency. Serve immediately with your broccoli.
