Zucchini FrittersIngredients:3 zucchini, organic, grated1 carrot, organic, grated tsp. Salt cup heaping flour, gluten free flour like Bobs Red Mill baking flour cup mounding parmesan cheese, grated tsp. Garlic powderClarified butter, or olive oil can be used but the butter is better flavor.Handful of chopped parsley cup yellow onion, finely diced2 eggs, beatenDirections:Grate the zucchini and carrot and place it in a strainer over a bowl. Press on the zucchini with a wooden spoon to press out as much liquid as possible. Sometimes I can get out as much as cup. Place the zucchini and carrot into a mixing bowl and add the egg, parmesan cheese, salt, flour, garlic powder, onion, and parsley. Stir well to combine.In a large frying pan over medium heat, add 1 to 2 tablespoons of clarified butter to the pan. When that gets hot add a scoopful of the zucchini fritters to the pan and spread the mixture out into a pancake shape about inch thick using the back of a spoon. I like using a cup to cup measuring cup to scoop the batter out.Let the fritters cook a good 4 to 6 minutes per side depending on how browned up they get. I like to check my at the 3 minute mark to see how fast they are browning up. If it seems they are browning too quickly and are almost burning, turn the temperature down. Cook until both sides are a nice golden brown.
