Poached Egg Over Avocado Toast RecipeIngredients:1 egg, pasture raised, 1 slice of toast avocado1 tsp. Lemon juiceSaltPepperSriracha sauce, as much as you wantButter, Kerry Gold is what I usedSmall handful of fresh parsley, choppedDirections:Take your egg(s) out of the refrigerator and set on counter. Fill a stock pot with enough water to cover the egg by 2 inches.Place the avocado in a bowl and mash it with a good pinch of salt, sriracha sauce, and lemonHeat the water to just under a boil. Water boils at 212 degrees F. Use an instant read thermometer to determine how how the water is. If you look for a simmer with bubbles on the bottom of the pan and not breaking the surface you are probably good.Lower the temperature to low. Place one egg in a separate bowl and remove any shells. Dont break the yolk or it wont work.Add a pinch of salt to the water and stir creating a vortex. Drop the egg in the center of the vortex and let it cook anywhere from 2 to 3 minutes depending on how soft you like your egg. Use a slotted spoon to remove the egg from the pan and place it gently on a paper-towel covered plate.Place your bread in the toaster while the egg is cooking. When the toast is done, spread butter on the toast. Add a nice layer of avocado on top and place the egg on top.Garnish with some fresh cracked pepper and a sprinkle of parsley.
