Ananya's World Kitchen - Episode #7

Blini

Ingredients:
•1 ½ cup buckwheat flour( use all-purpose flour if unavailable)
•1 cup lukewarm milk
•1 tsp sugar
•1 tsp rapid-rise yeast
•2 tbs melted butter
•1 egg, separated

Method:
1. Add salt to the buckwheat flour. Make a well in the center. Add yeast, sugar and milk. Mix well. Cover and let the batter rise until doubled in size. This process will take about 1 hour.
2. Add the melted butter and egg yolk into batter. Whisk the egg white until stiff and fold into the batter. Keep aside for 15 mins.
3. Heat a pan. Pour about ¼ cup of batter without spreading .bubbles will form on the surface of the blini. Cook for about 1 minute on one side before turning it over. Repeat with remaining batter.
