Idiyappam is a South Indian rice noodle dish.I t consists of rice flour pressed into noodle form and then steamed. Idiyappam flour is readily available at all stores. You can also make it at home with just plain rice flour. Roast it for 7-8 minutes on low flame and then mix it with boiling water.Its an all-time favorite recipe at our home. My kids love lemon, tomato and sweet idiyappam. Hubby likes coconut and thayir idiyappam. My favorite is the sweet Idiyappam.These can be served as it is or serve it with Mixed veg curry/Aviyal/ Vegetable kurma.For plain idiyappamIngredients:Water- 5 cupsRice flour/ Idiyappam flour- 4 cupsSalt- 3/4 tspSesame oil- 2 tspDirections:1. Boil 5 cups of water with 3/4 tsp salt and 2 tsp sesameOil. Add 4 cups rice flour to the boiling water. Mix it well and then switch off the heat.2. Close the lid and keep it aside for 10 minutes.3. Take a portion of the dough and knead well. Put dough inside the idiyappam/ sev maker with Omapodi/ small hole disc 4. Press/squeeze the dough directly on the idly plate. Steam for 10 minutes.5. Store it in hot pack immediately.Repeat the process with the rest of the dough, squeezing it while hot.For lemon idiyappam:Ol- 2 tspMustard seeds- 1/2 tspChannadal- 1 tspUraddal- 1 tspGreen chillies- 3Lemon juice- 1/2 cupTurmeric powder- 1/4 tspSalt- As neededHing- A pinchCurry leaves- for seasoningDirections:1. Heat 2 tsp oil. Add 1/2 tsp mustard seeds. When it starts to crackle, add 1 tsp channadal , 1 tsp uraddal and 3 green chillies2. Saute until dal turns golden brown.Then mix it with 1/2 cup lemon juice. Add turmeric powder, salt,hing and curry leaves to the lemon juice mixture.3. Take needed plain idiyappam in a bowl. Gently mix the lemon juice with the idiyappam.For coconut idiyappamIngredients:Oil- 2 tspMustard seeds- 1/2 tspChannadal- 1 tspUraddal- 1 tspGreen chillies- 3Ghee- 1 tspShredded coconut- 1 cupSalt- 1/4 tspCurry leaves- for seasoningDirections:1. Heat 2 tsp oil. Add 1/2 tsp mustard seeds. When it starts to crackle, add 1 tsp channadal , 1 tsp uraddal and 3 green chillies2.Saute until dal turns golden brown. Add 1 cup of shredded coconut, curry leaves, 1/4 tsp salt and 1 tsp ghee.3.Saute for 2 minutes , then switch off the heat.4. Gently mix it with needed plain idiyappam.For Karapodi/Spicy idiyappamIngredients:Toordal- 3 tspChannadal- 2tspRed chillies- 4Salt- 3/4 tspHing- A pinchShredded coconut- 2 tbspDirections:1. Roast channadal, toordal and red chillies until dal turns golden brown.2. Grind this with 3/4 tsp salt, a pinch of hing and 2 tbsp shredded coconut into a coarse powder.3. Gently mix it with needed plain idiyappam.For Tomato IdiyappamIngredients:Oil- 2 tspMustard seeds- 1/2 tspChannadal- 1 tspUraddal- 1 tspGreen chillies- 4Tomatoes- 5Curryleaves- for seasoningTurmeric powder- 1/2 tspSalt- As neededHing- A pinchRed chilli powder- 1/2 tspDirections:1.Heat 2 tsp oil. Add 1/2 tsp mustard seeds. When it starts to crackle, add 1 tsp channadal , 1 tsp uraddal and 4 green chillies2. Saute until dal turns golden brown.3. Then add tomatoes, curry leaves, turmeric powder, salt and hing.4. Saute until tomatoes are soft. 5. Add 1/2 tsp red chilli powder and saute until the hravy has become thick. Switch off the heat.6. Gently mix it with needed plain idiyappam.Thayir/Curd IdiyappamIngredients:Yogurt/curd- 4 tbspSalt- 1/4 tspOil- 1 tspMustard seeds- 1/2 tspCurry leaves- For seasoningDirections:1. Take 4 tbsp curd in a bowl. Add salt and curry leaves.2. Heat 1 tsp oil. Add 1/2 tsp mustard seeds. When it the starts to crackle, switch off the heat and add tadka to the curd mixture.3. Gently mix it with needed plain idiyappam.. Sweet Idiyappam:Ingredients: Sugar- 2 tbsp Cardamom powder- 1/4 tsp Boiled milk- 1 cupDirections:1. Boil 1 cup milk. Add cardamom powder and sugar to the boiled milk.2.
