This Incredible Sweet Maple Pouding-Chômeur Recipe is a Canadian Quebecois dessert treat! Translated it means unemployed cake or poor mans cake, poor mans pudding... but it is a decadent dessert that is anything but poor.
Ingredients:
115 g (125 mL / ½ cup) unsalted butter, softened
100 g (125 mL / ½ cup) of sugar
225 g (1 1/2 cups) unbleached all-purpose flour
10 mL (2 tsp) baking powder
2 mL (½ tsp) coarse salt
2 eggs
5 mL (1 tsp) pure vanilla extract
250 mL (1 cup) maple syrup
250 mL (1 cup) cream 35%
180 mL (3/4 cup) milk



Method:
Preheat the oven to 200°C (400°F).
Cream together butter and sugar until light and fluffy.
In a bowl, combine flour, baking powder and salt.
In a saucepan, bring maple syrup and cream to a gentle simmer.
To the creamed butter, add eggs, one at a time, and beat until mixture is smooth.
Beat in vanilla.
At low speed, slowly add dry ingredients alternating with milk.
Transfer the dough to a deep baking dish (aprox 2L / 8 cups).
Pour the hot syrup overtop.
Place the baking dish on a rimmed baking sheet, and bake 40 minutes or until a cake tester comes out clean.
Serve warm or cold.
