Indo-Chinese Vegetable Fried Rice

This restaurant style fried rice recipe only takes 15 minutes to prepare. It’s one of the dishes that everyone loves and it’s the perfect way to use any leftover rice.
This recipe calls for white rice but you can certainly use brown rice or quinoa.

Ingredients:
Basmati rice- 1 cup
Oil- 4 teaspoons
Salt- As needed
Garlic cloves-2
Ginger- A small piece
Green chillies- 4
Onion-1
Green beans- 3/4 cup
Cabbage- 1/2 cup
Carrot- 1/2 cup
Black pepper- 1 tsp
Vinegar- 1 tsp
Soy sauce- 1 tsp
Spring onions- For garnishing


Directions:

1. Soak 1 cup basmati rice in water for 30 minutes.
2. Boil 3 cups of water. Add 1/2 tsp salt and soaked rice.
3. Cook on medium flame. When it is 3/4 th done, drizzle some oil and then strain the water. Keep it aside.
4. Heat 2 tsp oil in a pan on high flame.
5. Add garlic cloves, ginger, green chillies and onions.Saute until translucent.
6. Add green beans, cabbage,carrots and salt. Sauté on high flame.
7. Cook until the vegetables are soft. Do not overcook.
8. Now add the cooked rice, Black pepper, Vinegar and soy sauce.
9. Mix it well without breaking the rice.
10. Garnish with spring onions.

Vegetable fried rice is ready!!
