INJI KARI KOZHAMBU

Ingredients

1½ tbsps ginger paste (inji)
1 inch ginger, cut into thin strips
750 grams boneless mutton, cut into 1 inch pieces
3-4 tbsps oil
2-3 cloves
2-3 green cardamoms
1 onion
2-3 green chillies, slit
1 tbsp coriander powder
1 tsp red chilli powder
¼ tsp turmeric powder
Salt to taste
½ cup coconut milk
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish

Method

1. Heat oil in a pressure cooker, add cloves, green cardamoms and onion and sauté till translucent.
2. Add ginger paste, ginger strips and green chillies and sauté for 1-2 minutes.
3. Add mutton and sauté on high heat for 4-5 minutes.
4. Add coriander powder, red chilli powder, turmeric powder and salt and sauté for 1-2 minutes.
5. Add 2½ cups water, mix, cover and cook on medium heat for 6-8 whistles.
