Instant Oats Idly:

Oats are known for their health benefits. You can take it in any form like Porridge, Dosa, Kozhakattai (dumplings) or Upma. But combined with goodness of oats, sooji and veggies oats idlies are not only healthy but delicious and filling too.These Oats idlies are instant and require no fermentation time like other batters.
I used rolled oats for this recipe. But instant or quick oats also works.


Ingredients :

Oats- 1.5 cups
Sooji (rava) or rice rava -3/4 cup
Yogurt/Curd-1.25 cups
Salt- As needed
Grated Carrots- 1 cup
Oil-2-4 teaspoons
Mustard seeds- 1 teaspoon
Green chillies-2
Ginger-1 teaspoon
Curry leaves
Eno (fruit salt)- 1/4 teaspoon or Baking soda- 3/4 teaspoon


Directions:

1. Dry roast 1.5 cups oats for 2 minutes. Grind it into a coarse consistency. (Skip this part if you have instant or quick oats)
2. Take a pan. Heat 2 tsp oil. Add 1 tsp mustard seeds. Wait till it splutter. Then add 2 green chillies, 1 tsp ginger ,1 cup grated carrots(optional) and curry leaves.
3. Sauté carrot for 2-3 minutes.
4. Add 3/4 cup sooji/rava and roast for2-3 minutes.
5. Add 1.5 cups of oats powder and combine everything. Switch off the flame and let it cool down.
6. Mix 1.25 cups sour curd, salt and 1/4 tsp Eno or 3/4 teaspoon baking soda.
7. Add water to make idly to a batter consistency.
8. Steam idlies for 12-15 minutes immediately.

Oats idlies are ready!!!
