Instant Papadam ( The Indian Crispy Cracker)

Who won’t love the fresh homemade papadam ? Learn to make papadam like a pro from scratch!!!
Papadam is an Indian crispy cracker that is served with a South Indian thali. Its not the same flatbread that is served as an appetizer before meal in the North Indian restaurant.
This is the typical South Indian papadam.

Ingredients:
Urad flour- 1 cup
Salt-1/4 teaspoon
Baking soda- 1/8 teaspoon
Oil- for frying

Directions:
1. Grind 1 cup Uraddal into a fine powder. Sieve it into a bowl.
2. Add salt and baking soda. Mix it well.
3. Add water little at a time to prepare like a chappathi dough.
4. Add 1 tablespoon oil.Knead the dough continuously for 3- 5 minutes to release air bubbles.
5. Take half portion first and roll into cylindrical shape.
6. Cut into small pieces.
7. Take 1 small piece and roll into a slightly thick round disc.
8. You can make it into a perfect round using cookie cutter or round lid.
9. Sun-dry for 15 minutes or Airdry for 1 hour.(flip the appallam after 30 minutes and make sure that both sides are completely dry before frying).
10. Heat oil over medium flame. Fry papadam in oil.
11. Instant papadam is ready for your meal.
